This Arauner Kitzinger pure yeast Burgundy in liquid form is sufficient up to a 50 L batch.
For the pure culture yeast BURGUND we recommend for cherry wines, dark fruit wines such as sloe wine or elderberry wine.
The pure culture yeast can ferment in the temperature range from about +16°C to about +28°C, with the highest performance at 20 to 25°C. Short fermentation time and highest possible alcohol content, which can be from 16 to 18Vol%.
Propagation of the culture, about 4 to 5 days before vinification, is necessary when:
- the temperature is below 20°C
- the batch to be fermented contains little pulp
- a relatively large quantity of wine is to be fermented with the culture (e.g. balloon culture for 50 L batch)
For fermentation in balloons, barrels, plastic containers and tanks, we recommend using the Duplex or Duplex 1 fermentation attachment.
With it one achieves:
- Protection of the fermentation batch from subsequent injections.
- Control of the beginning and end of fermentation
- Protection of fermented wines from oxygen ingress during storage and tapping - as a self-sulphurizer.
