Fining agents for wines

Fining agents are used in the production of wine to clarify and biochemically stabilize the wines. With the so-called fining, a possible later formation of haze or turbidity is prevented. This is done by precipitating tiny suspended particles during fining. In our store you will find a wide selection of fining agents for your homemade wine.

How the fining of wine works

Wine contains various unstable aromatic compounds and proteins. Due to their instability , even small fluctuations in the wine solution, for example in concentration, temperature or pH, can lead to undesirable turbidity. Fining agents used bind this so-called "fine turbidity" in the wine electrostatically to themselves and thus sink to the bottom of the fermentation tank.

Fining agents can also assume the function of filters within the scope of wine law. Treating wines with fining agents means that the finished products can withstand different transport, temperature and storage conditions, and therefore have a longer shelf life and stability afterwards. Moreover, fining can help to remove off-odors and off-tones from defective wines, provided that the wine law framework is observed.

Bentonite as a fining agent for wine

Treatment of wine with fining agents requires prior wine analysis. In addition, the use of such agents in winemaking must always be recorded in your wine records (cellar book). Two product groups are distinguished in modern fining agents. There are complex organic compounds such as egg white or gelatine, as well as powdered mineral or solid substances such as bentonite or activated carbon.

In the case of bentonite, these are clays which can filter thermolabile proteins from wine or juices in particular. Bentonite has a particularly high adsorption capacity for proteins dissolved in wines. Fining with bentonite also kills undesirable tyramines and histamines formed by bacteria during fermentation. These biogenic substances are attributed to trigger headaches and allergies.
