Arauner citric acid can be used to acidify low-acid juices, musts, mashes, jams, jellies and preserves.
Since some fruits naturally have too little acidity, shelf life and flavor harmony suffer.
Especially with the apple variety Delicious, the pear variety Willians-Christ, most sweet cherries and overripe mirabelles
, the acidity is usually only 2-4g/l, while the optimum is about 5-7g/l.
An addition of about 3g of citric acid per liter is recommended.
Dissolve the citric acid first in some juice (1 part acid dissolves in 2 parts juice)
and add this solution after squeezing the juice. Afterwards it is important to mix everything thoroughly.
You can also use Arauner citric acid to descale coffee machines.
