Product information "Arauner Kitzinger port wine yeast liquid for 100l"

This Arauner Kitzinger pure culture yeast port in liquid form is sufficient up to a 1 hl (hectoliter=100 liter) batch.

The pure culture yeast can ferment in the temperature range from about +16°C to about +28°C, with the highest performance at 20 to 25°C. Short fermentation time and highest possible alcohol content, which can be from 16 to 18Vol. %.

Propagation of the culture, about 4 to 5 days before vinification, is necessary when:

- the temperature is below 20°C
- the batch to be fermented contains little pulp
- a relatively large quantity of wine is to be fermented with the culture (e.g. balloon culture for 50 L batch)

For fermentation in balloons, barrels, plastic containers and tanks, we recommend using the Duplex or Duplex 1 fermentation attachment.

With it one achieves:

- Protection of the fermentation batch from subsequent injections.
- Control of the beginning and end of fermentation
- Protection of fermented wines from oxygen ingress during storage and tapping - as a self-sulphurizer.
