Brewing malt - The heart of the beer
Besides the hops, the malt is the body and the basis of your beer. In our store you can get different types of brewing malt ready to use, so that you can start brewing immediately. For your extensive knowledge as a brewmaster, however, it is also advantageous to know how brewing malt is created.
To produce malt, the respective type of grain is first placed in water for one to two days so that the kernels germinate and break down storage substances such as starch and fat. This germination process also activates important enzymes that are responsible for converting starch into sugar in the subsequent brewing process.
The progress of the malting process can be determined visually by the length of the root and leaf g erm. Once the grain has reached the desired state, this should be maintained so that not too many substances are broken down. For this purpose, the malt is finalized in two separate steps. First, the so-called " carbonization" takes place, in which the water content in the grain germ is reduced to below 20% by hot air.
During kilning, this water content is further reduced and the color and type of the brewing malt is determined by the temperature setting. Light malt is produced at a cooking temperature of about 80 degrees Celsius, while dark and colored malt is produced at about 100 to 120 degrees. At higher temperatures, in addition to a dark color, roasted aromas are created in the malt, which give certain types of beer, such as stout or black beer, their characteristic taste. The color of the brewing malt and thus also the resulting beer is based on the EBC scale from light to dark.
After germination, carbonization and kilning, the malt only needs to be cleaned of germs and cleaned. Now the brewing malt is ready for processing and you are ready to brew.
