The importance of the right temperature

During mashing, certain enzymes are responsible for converting the starch from the malt into sugar. This sugar is the basis for the alcohol content of the beer.

The responsible enzymes work particularly efficiently at certain temperatures. After the so-called mashing-in, which should take place at about 60 degrees Celsius, the mash is kept at about 45 degrees for a few more hours. The temperature in the mash tun is then raised to around 70 degrees Celsius. This heating is usually carried out in stages. This means that the temperature is not changed in one fell swoop, but that the mash is repeatedly rested after being heated in stages. This is to ensure gentle handling of the mash. In addition to an accurate thermometer , these constant temperature adjustments also require a heat source in the form of a burner that can be regulated easily and, above all, as flexibly as possible. It is precisely because of this flexible adjustability that working with gas as a direct heating system enjoys great popularity in the catering industry, among others.
